I've heard that if you see stars come out of your ball after you catch a Pokemon it means you've caught a shiny Pokemon. Is this true? If so, can you not see if it's a shiny while your battling it? Isn't it sparkle when you see it

If it looks like these, then yes.

Also, a [Shiny][4] Pokemon has a star in its summary, like this: ![][5]

Shiny Pokemon are much easier to identify by color. Check [here][6] for the Shiny Gallery.

(Note: Just the sparkles when catching the Pokemon has nothing to do with Shininess.)

Um, no.
The stars coming out means that the Pokemon is caught. Shiny Pokemon sparkle when they enter battle, so you'll be able to tell.
