Are there some specific areas to catch a shiny Pokemon? (exclude gyarados)?

Yes, in the Nature Preserve. Once you have seen all Pokemon in the BW2 Unova Dex, you are given some sort of passport, that will let you go to the Nature Preserve. You can find a Shiny Haxorus.
