To me it's cause they're fun to mess around with and play with all their glitches o3o
Because the Gameboy has been discontinued so that makes it a collectable? Usually, when for example, an Artist dies, his/hers paintings become more valuable. I don't know the correct answer to this, that's why I am leaving it as a comment.
you might as well make that an awnser, ther are probably lots of awnsers...

They are so valuable because of how hard it is to find a working cartridge for them, because they haven't been manufactured since they were released over a decade ago. :D
