Ambipom wouldn't do anything except attack, so in that sense Assault Vest would work for it. However it should hit hard and do it fast, so it should really be holding Life Orb.
Assault Vest is really only for tanks; T-Tar, Goodra, Conkeldurr etc. Ambipom isn't a tank, it's a glass canon.
