Which Eveelution will make good use of an Impish nature?

I recently hatched a 5IV Eevee with IVs in HP, ATK, DEF, SP.ATK and SP.DEF. I was about to release it when I thought that maybe I can use it. Does anyone know if this is possible in an effective way?

If you're talking about Impish nature,

The best suited Eeveelution is Umbreon.

The Umbreon you have there is almost competitive ready for a Trick Room Team (doubles) or a UU cleric in my opinion (only if it has Wish and/or Heal Bell though). It has some uselsess Special Attack IVs, and lacks Speed IVs, but that's about it. Those are quite minor details.
