When Pokemon are traded from sinno to x or y, are the Pokemon assigned a hidden ability, or they stay the same?

No, transfering doesn't change abilities.

Only Scolipede changes from Quick Feet to Speed Boost.

If a Scolipede with Quick Feet is transferred from Generation V to Generation VI using the Poké Transporter, its Ability will become Speed Boost.

To my knowledge Scolipede is the only Pokemon that changes abilities.
