Let's say that I used subsitute and the next turn used power trick. Would the subsitute have the original defense stat or would it change to become the attack defense stat?

It would still have the original defence. Power trick would not do anything to the substitute. Substitute only applys for the moment you create it. The next time you use substitute will however would use the new defence stat.
