I recently evolved my long-time favorite Rhydon to Rhyperior and now I'm wondering whether i should keep Stone Edge or change it for Rock Wrecker?

I suggest you keep Stone Edge.
Rock Wrecker is like Giga Impact, it doesn't let you attack next turn, making it possible for an OHKO(2 2x weaknesses). Stone Edge however, still does a lot a damage without that risk of not being able to attack.
