Ok, I have been playing pokemon sense FireRed but I haven't been doing the competitions, I wanted to make a competition team so I spent hours online yesterday and researched pokemon competitions, I picked some pokemon and researched there moves, but I need help seeing as I don't really know what I am doing, Also in game I never use defensive moves but I think I will need them facing other players, I am going to breed the pokemon I will be using that I why I don't know there exact IVs yet.

I have only been considering leftovers and a big root for held items but other than that I am not sure?

I have also been considering umbreon and tyranitar? I don’t know?

Welcome to the world of Pokemon battling. To start with, before you do any breeding, you can save time by using a Pokemon battle simulator online. The commonly used simulators are Pokemon Showdown and Pokemon-Online. These simulators usually have team builders that let you plan a team down to the items and EVs. You can also test your teams in battles with other players, so you can easily see the problems in your team and the moves before you actually do the breeding.

Let's go to member-specific stuff:
1. Aegislash - Nature: You aren't using Special Attack on that stalling set, why not use Careful (+Sp. Def, -Sp. Atk) instead.
2. Dragonite - It has respectable Special Attack, but I'm not confident about having Draco Meteor on it. The special attack EV's and nature will also be wasted once you've used Draco Meteor. IMO, Salamence is a much better Draco Meteor (ok, Flamethrower is more common than that) + Physical Attack set user as it's much faster and has slightly better Special Attack to take advantage of it. Also, Multiscale is a way better ability. You really should test this in a simulator first.
3. Roserade - Giga Drain and Energy Ball are reduntant type attacks. Change Energy Ball to Synthesis, Leech Seed or Protect instead. (Protect is to stall turns if the enemy is poisoned by toxic spikes.)

The usual set (that I know) is a bulky Dragon Dance + Extreme Speed, or Weakness Policy user...

Dragonite @ Leftovers / Life Orb / Weakness Policy
Ability: Multiscale
EVs: 156 HP 252 Atk 100 Spd (?)
Adamant Nature
- Dragon Dance
- Roost / Dragon Claw / Outrage
- Extreme Speed
- Earthquake / Fire Punch

Items: (since this is wifi, there will be no duplicate items)
1. Gardevoirite
2. Leftovers
3. Life Orb
4. Sitrus Berry
5. Black Sludge
6. Weakness Policy

I'm not an expert, but here is my opinion:

Gardevoir @Gardevoirite
Synchronize > Pixilate
Timid Nature (+Spe, -Atk)
252 SAtk, 252 Spe, 4 SDef
- Psyshock (STAB)
- Moonblast (STAB)
- Thunderbolt / Energy Ball (Coverage)
- Calm Mind

Aegislash @Lum Berry
Stance Change
Adamant Nature (+Atk, -SAtk)
252 Atk, 252 Hp, 4 Spe
- Sacred Sword (Coverage)
- Shadow Sneak (Priority+STAB)
- Sword Dance
- King's Shield

Lanturn @Leftovers
Water Absorb
Bold Nature (+Def, -Atk)
252 Hp, 128 SDef, 128Def
- Scald (STAB+Burn)
- Ice Beam (Coverage)
- Thunder Wave (Support) / Volt Switch (STAB+Help)
- Stockpile (Buff)

Dragonite @Weakness Policy
Jolly Nature (+Spe, -SAtk)
252 Atk, 252 Spe, 4 Hp
- Outrage (STAB)
- Fire Punch (Coverage)
- Earthquake (Coverage)
- Dragon Dance

Roserade @Black Sludge
Natural Cure
Timid Nature (+Spe, -Atk)
252 SAtk, 252 Spe, 4 SDef
- Giga Drain (STAB)
- Sludge Bomb (STAB)
- Toxic Spikes
- Sleep Powder

In the last slot, following your team construction, you have a Fire Type, I don't like Houndoom without a Sun Team or his mega form, so here is my suggestion:

Volcarona @Life Orb
Modest Nature (+SAtk, -Atk)
252 SAtk, 252 Spe, 4 Hp
- Fiery Dance (STAB+Buff)
- Bug Buzz (STAB)
- Psychic (Coverage) / Giga Drain (If you have a V GEN one)
- Quiver Dance
