Leafeon may want Sunny Day to take advantage of his Leaf Guard, (you could replace Protect/Detect) and it could also help Synthesis. If you are worried that this will give an advantage to his fire weakness you can always switch out and let Vaporeon deal with fire.
You may also want to replace Seed Bomb with Arial Ace to cover Vaporeon's Grass weakness, Leafeon & Umbreon's Bug weakness, and Umbreon's Fighting weakness.

Umbreon may want a stalling move, such as Protect or Moonlight so he can stay in battle longer. (mabe take away faint attack and leave the attacking to your other two)

Vapoeon's Ice beam is good to cover Leafeon's flying weakness and besides it is an awsome move. Also replace either Surf or Hydro Pump with Dig (to deal with his electric weakness and Leafeon's Poison weakness)

This leaves the only uncovered weakness as Leafeon's ice one, but Vaporeon has resistance to ice and could deal with it if it wasn't ice/water, ice/grass or ice/dragon. If it was Ice/Water or Ice/Grass you could try and take them out with Leafeon's Leaf Blade/Arial Ace before they kill him.

Hope this helps

Pft.

Umbreon:
Hold Item: Blackglasses, Leftovers, or Toxic Orb with the Synchronize ability
Payback: May seem like a weak dark type move, but it's damage doubles if you go after the opponent.
Curse: Ups defense and attack in expense of speed. Goes great with Payback, as you need to strike after the opponent, and it is a physical move, and even boosts defense.
Screech: Lower your opponents defense so Payback is killer.
Moonlight/Swagger/Confuse Ray: Since Umbreon has great defenses, it is always annoying to heal him after your opponent spent such a long time dealing damage. Or, instead, use confusing moves. If you are using swagger, it ups the opponent's attack, and confuses them, so they hit themself harder. And if you use Screech with it, they might even hit themselves and almost faint. Confuse Ray works too if you are worried about the opponent having high attack.

Vaporeon:
Hold Item: Leftovers, Shell Bell
Surf: Hydro pump is nice, but is not good for training because of it's low pp and accuracy.
Blizzard: Good for dragon, grass, and flying types.
Aqua Ring: Along with Leftovers, it'll help constantly heal Vaporeon. Her huge HP stat will be annoying for the foe, and even more so if it is healed.
Calm Mind/Dig/Rain Dance: Calm Mind ups your special, which is helpful with Surf and Blizzard. Or dig, (although not completely recommended) which helps with electric types. Rain dance is helpful if you want to get rid of Leafeon's Sunny Day, and power up Surf.

Leafeon:
Hold Item: Miracle Seed, SilverPowder
Leaf Blade: Killer, especially with her high attack. Keep it.
Synthesis: Always great to heal. ;]
Sunny Day: Goes great with her ability, plus Synthesis heals better.
X-Scissor: Helps with Psychic, Dark, and Grass types, and goes well with her high attack. Or, replace it with any move that ups her Defenses (Special, really), as it will annoy the opponent, especially with Synthesis. ^^

Hope I helped. And if the moves I listed can't be learned, or are not a TM, please don't bite my dang head off.
