I wanna keep my Cherrim in it's sunny form, so is there a way to do that?

Nope! The only way to get Cherrim into Sun Form is to use sunny day, or send out a pokemon with drought before you send out cherrim (like ninetails or groudon). If you use sunny day, you can hold the heat rock to extend the duration of sunny day by 3 turns.
