I used theif on 2 of cherens pokemon my gengar used theif and then my hydregion used theif then when the battle was over i went to receive the items but they were gone.The items i stole were leftovers and focus sash

In Gen V, if you steal a trainer's Pokemon's item, it will return to the trainer at the end if the battle.
