Say on my opponent has Machamp and Zangoose. I have Bisharp and Galvantula.

I make my Bisharp use Sucker Punch on Zangoose. However, Zangoose attacks Galvantula instead. So Sucker Punc hdoes not hit Zangoose. However, if Machamp attacked my Bisharp, would Sucker Punch be redirected from Zangoose to Machamp?

No. From my knowledge, and from what I was able to glean from Bulbapedia, Sucker Punch can affect the target and the target only. So it wouldn't hit Machamp. I'm quite sure, though, that Zangoose just has to be using a damaging move for Sucker Punch to work, not a damaging move that targets Bisharp.
