If I set a specific nature for the day at Celadon City, for example, Jolly, wild Pokemon in grass, caves, in the air, and the legendary Pokemon will have that nature. However, I am not entirely sure if that tactic applies to the Pokemon from Pokemon Go.

Are the Pokemon the nature of that day, or do they already have a set nature? Is there something I'm missing?

In Pokémon: Let's Go, Pikachu! and Let's Go, Eevee!, on the left side of the Pokémon Center is a Channeler called Madam Celadon with her Abra. For 10,000, Madam Celadon can influcence the Nature of wild Pokémon they encounter for the rest of the day. The Nature is determined with two questions; the first question determining the Nature's strength, and the second determining its weakness.

Because Special Attack and Special Defense do not exist in GO, they are set to be equal to Attack and Defense. Meanwhile, its Speed IV and Nature are determined at random, and can be hard reset by saving before encountering the Pokémon and resetting until the desired result is met.
