stat evolution explanation question

I'm training a sewaddle to be a Leavanny to have a really good pokemon collection from the Unova to use in the battle subway & his highest stat is defence. When he evolves into Leavanny, will his defence be lowered to become stronger in attack, or will his attack suddenly get super powerful boosts & his defence not be lowered? I'm not sure how the stats change through evolution, can someone please explain this whole stat thing to me?

When it goes from sewaddle to swadloon, it's stats will go up in everything but speed, in which it will stay the same. When going from swadloon to leavanny, it's defenses will go down but everything else will go up. Hope this helps!
