based on what i saw, pokemon show you their moves and ditto copies them.
Yeah, I’d like to know which ones I can learn and how
I was trying to answer this earlier but the information is still pretty limited on the internet for pokopia
especially for the transformation moves which are more complitated
still nobody answering this? I guess I'll finish my answer.
If it helps, I upgraded leafage by eating salad.
I also obtained surf, camouflage, rototiler, strength, rock smash, cut, water gun.
With the answer, I’d also like to know the upgrades

There are 14 total moves in Pokopia according to my source: 8 regular ones and 6 Transformation Moves. Most of these are obtained by getting a Pokémon to spawn by creating its habitat (some cases excluded), and then fulfilling the Pokémon's request after interacting with it (called "befriending" it for some reason) to accept. Then it will teach you the move and you have to use transform to learn it. Below is a brief guide on how to do these.

Regular Moves:

How to use regular moves:
All regular moves are (assuming you're on console) used by pressing ZR while they are your Active Move, with the exception of Jump, (used by pressing R), Strength (used by pressing A), and Suck, which is used like this:

Water Gun:

  • Taught to you by: Squirtle

  • Creating Habitat:
    There is actually no habitat needed for this one. You'll meet Squirtle at the beginning of the game.

  • Fulfilling Request:
    Squirtle does not have a request. They just give you the move.


Leafage:

  • Taught to you by: Bulbasaur

  • Creating Habitat:
    there are two different habitats in which Bulbasaur can spawn: Tall Grass and Bench With Greenery.

    • Tall Grass requires 4 of the item "Tall Grass" and can be made in any area. It can also be made if you find 4 connected pieces of Dry Grass and rehydrate them using Water Gun.
    • Bench With Greenery requires 2 of the "Hedge" item (any variety) and 1 of the "Bench" item (wide variety). This can also be made in any area.
  • Fulfilling Request:
    Game8 simply says that "Bulbasaur will ask you to fulfill a simple request for it". In my lack of knowledge, I assume this means it's a randomized request, as the request is specified for some of the other moves. All full list of the requests can be found here.


Rock Smash:

  • Taught to you by: Hitmonchan

  • Creating Habitat:
    There is only one habitat in which Hitmonchan spawns: the Exercise Resting Spot. This can be made by placing a Punching Bag next to any Seat.

Hitmonchan should appear after a while, testing out the Punching Bag.

  • Fulfilling Request:
    Hitmonchan will ask you to bring it two Stones. When you complete this, Hitmonchan will teach you Rock Smash.

Cut:

  • Taught to you by: Scyther

  • Creating Habitat:
    there is only one habitat in which Scyther spawns: the Tree-Shaded Tall Grass. This is made when four patches of Hydrated Tall Grass are in contact with a Lush Tree. The easiest way to do this is find a Lush Tree and use Leafage to make all the patches of Grass.

  • Fulfilling Request:
    Scyther will ask you to bring him two Sturdy Sticks. If you complete this, Scyther will give you cut.


Rototiller:

  • Taught to you by Drilbur

  • Creating Habitat:
    Drilbur does not require a custom habitat. It can by found in an area on the right side of the Pokemon Center. This area is blocked by stones and requires you to use Rock Smash to get in.

  • Fulfilling Request:
    Drilbur will ask you to water the dry soil around his training area so he can use Rototiller on it better. They will teach you the move upon completion of the request.


Jump:

  • Taught to you by Magikarp

  • Creating Habitat:
    Magikarp does not require a custom habitat to spawn. To find it:

From the starting point, go behind the mountains by stacking blocks to ascend the terrain.

Note that Jump is not technically considered an actual Pokemon move, and it does not take PP.

  • Fulfilling Request:
    Magikarp wants you to create a habitat as its request (but you don't need to befriend it, you can just find it)
    • Step 1:

      Talk to Magikarp that is flopping in the shore. Magikarp will ask you to create the Ocean Fishing Spot.

    • Step 2:

      From the right side to where Magikarp is, you will see a fishing rod placed on the beach. Put any seat to complete the habitat. In the chance that you don't have a seat available, there is a workbench nearby for you to craft.


Strength:

  • Taught to you by Machoke

  • Creating Habitat:
    Machoke only spawns in one habitat: the Grassy Training Field. This is made with four of the Red Tall Grass item and two of the Sandbag item. When it is created, "there is a chance that Machoke will appear in that habitat."

  • Fulfilling Machoke's Request:
    After accepting the request, do this and Machoke will teach you Strength:

Machoke will lead you to an area filled with stones. Gather 5 stones for Machoke to complete the request.
You can hold Y to gather multiple stones at once to expedite the process.


Suck:

  • Taught to you by Paldean Whooper

  • Creating Habitat:
    You need to create two habitats for this one. You need to create one for Wooper to spawn in, because they helps you with the request, (and is the one who finally teaches the move to you), and you also need to get Piplup to spawn, because they give you the request.

    • To get Wooper to spawn, make the Marshy Tall Grass habitat at Bleak Beach. This is made by connecting 4 Yellow Tall Grass to a body of Muddy Water.
    • To get Piplup to spawn, create the Hydrated Yellow Tall Grass at the Bleak Beach (again) from 4 adjacent Yellow Tall Grass that you used Water Gun on.
  • Fulfilling Request:
    Piplup has two requests it asks of you. One is as Swimming Time (to get Surf), but we'll get to that later in this answer. You actually have to do that first, so I suggest you read the guide to it down there. The one you want for Suck is called "Make a Waterfall".

You must talk to Piplup in order to trigger this request, since it will not automatically appear in your request list. You must also have finished rebuilding the Rocky Ridges Pokemon Center before this quest can appear.

  • Step 1:

    Talk to Paldean Wooper to learn how to suck up liquid. With this ability, you can now extend water or create water sources.

  • Step 2:

    Demonstrate the new ability by sucking up the muddy water to the pond in front of it. [Unrelated but this makes a new source for swamp, and if you put tall grass around it, "there is a high chance you can spawn a Clodsire" if you want].

  • Step 3:

    Go back to Piplup and complete the quest by spitting out water in the area to make a waterfall.

  • Step 4: (unspecified but I'm fairly sure this is how it works)
    Go back again to Paldean Wooper and they'll teach you Suck.

Transformation Moves:

How to use Transformation Moves:
All transformation moves vary in usage methods, so they will be mentioned in each individual section.

Surf:

  • Taught to you by Lapras

  • Creating Habitat:
    To get Lapras to spawn on the area, you need to create a Tropical Seaside habitat in Bleak Beach. This requires one Large Palm Tree and four Hedges and place them near the ocean.

  • Fulfilling Request:

    • Step 1:

      Speak to Piplup, and it will ask you to swim with it. However, the problem is that you cannot swim. It will then ask you to speak to Professor Tangrowth for a solution.

    • Step 2:

      Speak to Professor Tangrowth about learning how to swim, and he will point you to a Pokemon named Lapras, as well as the habitat you need to build to encounter it.

    • Step 3:
      Create Lapras's habitat as it says above.
    • Step 4:

      Once Lapras appears, speak to it and clear the surrounding mud as per its request.

    • Step 5 (it doesn't say the amount for some reason):

      Once enough mud has been cleared, report back to Lapras, and it will teach you the Surf ability.

    • Step 6:

      Return to Piplup and agree to swim with it. Follow it to the canals of the town, transform, then surf alongside Piplup through the waters until you reach the end to conclude the request!

  • How to use Surf:

While near a water block, press the B Button to transform into Lapras. Use the Left Thumbstick to move and swim in water. Ditto will automatically revert back once they reach land.


Camouflage:

  • Creating Habitat:
    This is in Bleak Beach, and can only happen after you have built your home:

Find a tiling that's strangely out of place right by the Bleak Beach Pokemon Center. Hit it [with rick smash] to discover that it's a Zorua in disguise. It will then ask you for an item it can shapeshift into next, so gladly oblige.

Meaning you don't have to build a habitat.

  • Fulfilling Request:
    > Upon accepting Zorua's request, you'll unlock the recipe for toy blocks. Go ahead and craft one, then show it to them. Report back to Zorua with the toy blocks to complete this request. This will unlock the Camouflage ability.

  • How to use Camouflage:
    > Press ZR while near an object to copy its appearance. You can move around slowly while using Camouflage but you cannot speak with Pokemon in this state.


Waterfall:

  • Taught to you by Gyrados:

  • Creating Habitat:
    Gyrados requires no habitat to befriend.
    > You can find Gyarados at the floating island west of the island with the huge building in Sparkling Skylands. Go to the bottom of the waterfall to find Gyarados roaming at the water.

  • Fulfilling Request:
    Talk to Gyrados and give them a Bread Bowl to finish the request. This video shows where to find a Bread Bowl:

  • How to use Waterfall:
    > While on the water, press the B Button to transform into Lapras. Swim next to a waterfall and press the A Button to swim up and reach the top of the waterfall.
