Lefteon and Glaceon override Espeon, Umbreon and Sylveon.

Espeon when leveled up with high friendship during the daytime, including morning (Generation II onward, excludes areas with a Moss Rock or Ice Rock.)
Umbreon when leveled up with high friendship during the nighttime (Generation II onward, excludes areas with a Moss Rock or Ice Rock).
Sylveon when leveled up with a Fairy-type move and 2 Affection hearts in Pokémon-Amie (Generation VI onward, excludes areas with a Moss Rock or Ice Rock).

As for Espeon/ Umbreon or Sylveon,
Sylveon gets priority so Eevee would evolve into a Sylveon instead of a Espeon/ Umbreon.
If your Eevee has + 2 Affection in Pokemon Amie, a Fairy Type Move and 220 + Happiness During the Daytime/ Nighttime you would need Eevee to Forget the Fairy Type Move in order for it to evolve into Espeon/ Umbreon.
