It could work,yes. Your opponent would be unable to attack every other turn, and due to that, you could use protect to keep yourself safe from harm. But the opponent could easily switch out and make this whole thing useless. They could also use Magic coat or switch into a pokemon with magic bounce and deflect that taunt back at you. You'll end up having to either struggle or switch out from that.
