My hypothesis was that the Gimmighoul coin amount was set as soon as they spawned, meaning the amount wouldn't change if you restarted your game.

To test, I saved my game sold my Gimmighoul coins (I already had 999), and went to the Poco Path Lighthouse and the South Province Area 3, Glaseado Mountain, and West Province Area 1 watchtowers and knocked them out. Poco gave me 30, SPA3 gave me 50, Glaseado gave me 50, and WPA1 gave me 30. I also collected some static Gimmighoul coins, 1 from the sign at the Grand Olive Orchard fly point, 3 from the one on the barrel in the nearby ruins, and 5 from the one on the sign of Paldea's Highest Peak.

Next, I reset the game and repeated the process, this time catching the Chest Gimmighoul this time. Poco gave me 30, SPA3 gave me 50, Glaseado gave me 50, and WPA1 gave me 30, I got 1 from the Olive sign, 3 from the ruins, and 5 from the PHP sign.

At this point, I had already gathered the evidence I needed, but what if I just got stupid lucky? So I did this a THIRD time.
30, 50, 50, 30, 1, 3, 5. I know, what a damn shocker.

So yeah, catching/resetting the game does NOT give you a higher amount of coins from the Chest Gimmighoul (should probably add that the Chest do give higher amount of coins than roaming but you should already know that). Also, I found like -1 resources online that proved otherwise. So yeah, there you have it.
