Just made an OU singles team.

I used to have Archeops with SR + Defog + Taunt + U-turn instead of Garchomp, should I switch back to Archeops or keep Garchomp?

Manaphy @ Leftovers
Ability: Hydration
Shiny: Yes
EVs: 252 SpA / 4 SpD / 252 Spe
Timid Nature
- Tail Glow
- Dazzling Gleam
- Energy Ball
- Ice Beam

Obviously more of a special attacker.

Scizor @ Leftovers
Ability: Technician
Shiny: Yes
EVs: 252 HP / 252 Atk / 4 SpD
Adamant Nature
- Bullet Punch
- Defog
- Knock Off
- U-turn

Support AND physical attacker. Nice.

Rotom-Heat @ Leftovers
Ability: Levitate
Shiny: Yes
EVs: 248 HP / 8 Atk / 252 SpD
Careful Nature
- Confuse Ray
- Will-O-Wisp
- Sucker Punch
- Pain Split

Sort of a Will-O-Wisp staller...?

Venusaur @ Venusaurite
Ability: Overgrow
Shiny: Yes
EVs: 248 HP / 8 Atk / 244 SpA
Mild Nature
- Hidden Power [Fire]
- Giga Drain
- Petal Blizzard
- Sludge Bomb

ANOTHER Special attacker; quite bulky, too.

Umbreon @ Leftovers
Ability: Synchronize
Shiny: Yes
EVs: 252 HP / 4 Def / 252 SpD
Calm Nature
- Wish
- Protect
- Heal Bell
- Foul Play

Support Poke.

Garchomp @ Rocky Helmet
Ability: Rough Skin
Shiny: Yes
EVs: 4 Atk / 252 Def / 252 Spe
Adamant Nature
- Stealth Rock
- Toxic
- Rock Slide
- Dragon Claw

And then my lead.

Just a simple, quickly built team. Any suggestions?

Well, I can't help but notice your manaphy has no STAB moves. While energy ball is great, you would probably be better off with  surf or scald? You can leave the grass type moves to your buddy venusaur. Other than that, it seems to be pretty good. As for garchomp over archeops, garchomp can definitely do some damage with RS+RH but Archeops is just a tad bit faster for putting out stealth rocks.
