Me and a couple other friends are having a sort of tournament between the 6 of us.
I obviously want to win I have chosen the Steel type my question is how do you think I will fare and is there any changes you would make to give me a better chance of winning?

The rules are:
Must be Mono-type
Must have 6 Pokemon
No legendary Pokemon
Dual types are allowed
No items

We all know the Pokemon each of us will use so:
Grass: Venusaur, Tangrowth, Ludicolo, Leafeon, Sceptile, Ferrothorn
Fire: Ninetales, Charizard, Chandelure, Typhlosion, Houndoom, Volcarona
Psychic: Gardevoir, Medicham, Xatu, Espeon, Claydoll, Grumpig
Water: Slowking, Starmie, Gyarados, Swampert, Lapras, Craudant
Dark: Tyranitar, Absol, Krookadile, Zoroark, Hydreigon, Carvanha

Obviously my friends aren't all that versed in competitive battling but still, I may struggle against Fire and Dark, based on type disadvantage.

My team, all are EV trained, bred for IV's and Nature so all of them have above 24 IV's in their most used stats.

These are pokemon that you expect from a steel team.Try something like a empoleon
Since they're EV trained, can you tell us these EVs? Also Nature and items.
No items allowed trachy.
ehh probopass would trap ur whole team and finish off with HP fire :p
Fired from Non-STAB.... It will hardly 2HKO.
And nobody even uses Probopass in OU.

Wow. Even when 4x super effective, it can't OHKO Scizor at neutral. Dats sad.
Oh, didn't notice the no items thing.
Still, EVs and Nature.
And in addition to those stat calcs that JCM performed that show that Probopass sucks (even adding your Sunny Day into things, the only thing it ends up KOing is Scizor), none of the teams he is facing are mono-Rock or mono-Steel.
The funniest was the Bronzong thingy xD

Also this isn't for competitive battling, only for the tournament containing the Pokemon listed at the top. And no one has a Probopass I don't think, if they did they'd be breaking the rules haha.
One more thing I haven't got a clue what moves they'll have but I can make a pretty good assumption based on their skill level and move sets available.

Try use this:

Empoleon
Ability: Torrent
Nature: Modest (+SpAtk -Atk)
EVs: 4 HP / 252 SpAtk / 252 SpDef
-Surf
-Ice Beam
-Grass Knot
-Stealth Rock

This is my special Empoleon. Surf gains STAB. Since Surf is not-very effective in Grass-, Dragon-types, I use Ice Beam to kill them. For the other Water-types that Surf and Ice Beam is not-very effective I use Grass Knot. You may know why Stealth Rock is here.

Forretress
Ability: Sturdy
Nature: Relaxed (+Def -Spd)
EVs: 252 HP / 252 Def / 4 Atk
-Rapid Spin
-Toxic Spikes
-Spikes
-Gyro Ball

Rapid Spinner and for more hazards. Try setup 2 Toxic Spikes. If you survive go using Spikes. If you is taunted use Gyro Ball.

Skarmory
Ability: Weak Armor
Nature: Quiet (+Spd -SpAtk)
EVs: 252 Atk / 252 Spd / 4 Def
-Steel Wing
-Brave Bird
-Spikes
-Whirlwind

(S)He can continue setup more Spikes. This Skarmory is weird but I like this moveset. Weak Armor, nature and EVs can up the speed. Weak Armor lowers the defense so Steel Wing may help a bit to up the defense. Steel Wing and Brave Bird are not-very effective in Electric-, and Steel-types so Whirlwind can blow the target away.

Lucario
Ability: Inner Focus
Nature: Timid (+Spd -Atk)
EVs:252 SpAtk / 252 Spd / 4 SpDef
-Aura Sphere
-Flash Cannon
-Dragon Pulse
-Calm Mind

Setup some Calm Minds and go sweeping. Aura Sphere and Flash Cannon gains STAB. Dragon Pulse is for type coverage(it's normal effective in pokemons that Aura Sphere and Flash Cannon is not-very effective such as Volcarona).

Aggron
Ability: Heavy Metal
Nature: Adamant (+Atk -SpAtk)
EVs: 4 HP / 252 Atk / 252 Def
-Heavy Slam
-Earthquake
-Thunder Punch
-Ice Punch

Heavy Slam is the main move. He is big, have 110 attack in base stats, helpful nature, 252 EVs and Heavy Metal as ability. Fire-, Electric- and Steel-types that resist the Heavy Slam, Earthquake kills. Thunder Punch is for Water-types and with Ice Punch can have the BoltBeam coverage.

Metagross
Ability: Clear Body
Nature: Adamant (+Atk -SpAtk)
EVs: 4 HP / 252 Atk / 252 Def
-Meteor Mash
-Earthquake
-Bullet Punch
-Zen Headbutt

A pseudo-legendary pokemon. Meteor Mash and Zen Headbutt gains STAB. Earthquake can takes Steel-types that Meteor Mash and Zen Headbutt is not-very effective. Bullet Punch is a priority move(priority +1) so maybe good some times.

One problem with that fortress.After set up all it can do is rapid spin and gyro ball.
and...? forretress is here to put hazards and use rapid spin to blow away the hazards.
and other, forretress don't will survive much time: setup 2 toxic spikes and 4 spikes??? nah. he may can setup 2 toxic spikes and 1 or 2 spikes only.
