My favourite depends on the circumstance.
Jolteon was my first ever eeveelution as a kid, I love him very much.
Umbreon is good in game as a toxic wall to bruteforce if you don’t wanna grind
Leafeon is stronk with leafblade swordsdance
Glaceon I like the most appearance wise
Espeon is strong psychic attacker
Vaporeon has some of the prettiest cards
Flareon also has really good cards
Sylveon is stronk and also has really amazing cards

In some games they cost less per step than max repels.
