Would it have no type? Or will it keep it's Flying type in this case?

It would become ??? type, or it would become normal type, depending on which generation.

Generation IV

If a Pokémon that has become a pure Flying-type uses Roost, it will become a ???-type Pokémon until the end of the turn.

Generation V

If a pure Flying-type Pokémon uses Roost, it will become Normal-type until the end of the turn.

About Generation 4, it's funny because until Tornadus, there was no pure flying type :)
well there was arceus-flying though it for some reason couldnt learn it

There is a way however. If a Color Change is Skill Swapped onto a Smeargle, for example, and then hit by a Flying move, it was become a Flying type. If Smeargle moves second and uses Roost, the effect would be triggered.
