When does Darmantian change to Daruma/Zen Mode?

If changes into Daruma mode when its HP drops to below half. Darmanitan in Daruma mode is blue in color, is a Psychic types as well. It switches its Attack and Special Attack from normal Darmanitan, and has boosted defenses lowered Speed.

It needs then Zen Mode ability for this change to happen, which comes from the Dream World.

It doesn't necessarily need to come from the dream world. There's statues in the desert resort before you enter relic castle get a ragecandybar then talk to the statue. If you get female Darmanitan there is also a chance that the offspring will  have the ability

It changes when it gets below half health. And It Has To Have The "Zen Mode" ability.
