I’m really tossled up on what to use, as a lot of meta threats and staples (Ogrepon, Urshifu-R, all paradoxes, etc.) are out of the ballpark and now there is absolute chaos in what to use so what are some good meta staples nowadays?

I don't think anyone really knows at this point. You might want to wait a few weeks or a month for the metagame to settle down.

I think your best odds are looking at staples from before the Home/legend invasion. In particular, Dragon spam has found a lot of success when I started playing the first formats. I remember building around Murk, Gyarados, Hydreigon, and Garchomp, each with their own coverage options, strengths, and weaknesses. Murkrow is definitely outclassed by Whimsicott (definite premier Tailwind setter) but the others definitely have potential, especially thanks to Chien-Pao and Flutter Mane being axed.

Speaking of Whimsicott, Beat Up Annihilape is definitely on my radar. This thing was great with Maushold preDLC, and it's probably gonna be goot now with either Maus or Whims. Both have their advantages: Maus has Friend Guard and Follow Me, while Whims can usually be pair with more Pokemon while packing Tailwind, Taunt, Fake Tears, and whole host of util.

DozoGiri is probably going to come back as strong playstyle, especially when considering the absence of Haze Chien-Pao. The only other relevant mons that get Haze are Palafin and Murkrow, leaving niche options to deal with it like Flower Trick Meow and Clear Smog + Spore Amoonguss. Due to the lack of Waters, I actually expect both DozoGiri and Palafin to see some amount of usage, as well as other niche mons like Liquid Voice Hyper Voice Primarina and Araquanid with its Water Bubble.

With Flutter Mane out of the picture, there actually are very few "good" fairies. The only ones I see are Sylveon, Galarian Weezing, and Azumarill, and only Sylv actually uses its Fairy STAB well, with GWeez and Azu mainly focusing on Util and Water STAB, respectively. Sylveon will definitely play a role in dealing with the Dragons I mentioned earlier.

Finally, Psyspam Trick Room is gonna be back again. The do-or-die squad of Indeedee, Armarogue, Torkoal, and Ursaluna are back abusing it to the fullest. I don't think I need to say more.

Oh yeah, and of course there are the mons that will always be good. The aforementioned Amoonguss and Rillaboom are still the fundamental Grasses in the meta alongside Whimsicott's domination after Tornadus's departure. Other mons that could definitely work are Kingambit, new Sun abusers like Lilligant, and Weather archetypes led by Politoad, Tyranitar, and AloNinetales. Weather's strength comes in the absence of Paradox mons whose power already rival offensive mons with their respective Weather boosts.
