Will Wo-Chien respawn if I accidentally beat it?

What can I do if I didn't resave before the battle?

Wo-Chien (along with the other Treasures of Ruin) can be rebattled after the following conditions have been met:

1. The console has been restarted
2. One hour has passed on the console's internal clock

There is no need to defeat the Elite 4 like in previous games. It's just a waiting game.
