They do show the pokemon that evolve by trade. They just change the way they evolve because it's a very weird way for them to evolve. For example, Misty owned a Politoed, and it evolved from her Poliwhirl when it held a king's stone. The whole trading evolution is a way to get people to interact with others (or buy another copy of the game) if they want to complete the pokedex.
