What is the percentage a pokemon is holding an item?

May I just ask, are you looking for a specific item that can be found on Pokemon that when catch, has a chance of holding it? If yes, i suggest you put Pokemon with Frisk ability to be first on your party.

If you visit a site like serbii (maybe even here I'm not sure) it shows on a pokemons page the chance of getting an item on a Pokemon for example you have a 5% chance of finding a lucky egg on chancy.
Though if you use a move like fling you have a 100% chance of finding avwols Pokemon with an item.
