Made one of these for OU too and it worked really well, but this one I'm a bit iffy about.

Klefki @ Light Clay
Ability: Prankster
EVs: 252 HP / 252 Def / 4 SpA
Bold Nature
IVs: 0 Atk
- Reflect
- Light Screen
- Spikes
- Dazzling Gleam

Only reason I use this over Grimmsnarl is access to hazards. Dazzling Gleam makes sure that things like opposing Crawdaunt, Flygon, Heracross, etc, don't get setup opportunities.

Cloyster @ Heavy-Duty Boots
Ability: Skill Link
EVs: 252 Atk / 4 SpD / 252 Spe
Adamant Nature
- Shell Smash
- Icicle Spear
- Ice Shard
- Rock Blast

Standard Shell Smasher. Polteageist automatically loses to Dark types, so this one is more preferable. Don't like taking damage that is not halved by screens (aka Stealth Rock damage) so I'm trying out Heavy Duty Boots.

Necrozma @ Weakness Policy
Ability: Prism Armor
EVs: 252 HP / 252 SpA / 4 SpD
Modest Nature
IVs: 0 Atk
- Autotomize
- Calm Mind
- Photon Geyser
- Heat Wave

With Dual Screens up you basically get free setup due to Necrozmas already big bulk, and Prism Armor. Photon Geyser and Heat Wave seem to hit the metagame decently enough. Weakness Policy is an added bonus if Autotomize is set up.

Heracross @ Flame Orb
Ability: Guts
EVs: 252 Atk / 4 SpD / 252 Spe
Jolly Nature
- Swords Dance
- Close Combat
- Knock Off
- Facade

Fast Swords Dancer. Close Combat is strong STAB, Knock Off covers Ghosts, and Facade is a strong filler move.

Incineroar @ Heavy-Duty Boots
Ability: Intimidate
EVs: 252 Atk / 4 SpD / 252 Spe
Jolly Nature
- Swords Dance
- Flame Charge
- Knock Off
- Close Combat

Team member I'm most iffy about. Swords Dance up, Flame Charge, and do tons of damage. Just feels like this takes too long to set up.

Porygon-Z @ Silk Scarf
Ability: Adaptability
EVs: 252 SpA / 4 SpD / 252 Spe
Timid Nature
IVs: 0 Atk
- Nasty Plot
- Thunderbolt
- Ice Beam
- Tri Attack

Nasty Plot, and spam BoltBeam. Silk Scarf + Adaptability + a Nasty Plot will do incredible damage to Pokemon that don't resist.

I don't know much about UU, so I won't actually "answer" this, but I do have a few thoughts.
I don't think Spikes justifies using Klefki over Grimmsnarl at all. Realistically, when will you ever get the chance to set up both screens AND Spikes? I'd prioritize a more reliable, less passive screener if it were me. Having this thing be your only hazard setter while needing it to set up screens for you as well places way too much of a necessity on a pokemon that can easily be set up on or otherwise taken advantage of.
I don't see the point in using Cloyster as a Shell Smasher unless you are using King's Rock, which is what gives it a niche over the other Shell Smashers. Since you don't want to use Polteageist, I'd definitely recommend Blastoise as an alternative if you don't want to rely on King's Rock.
The Necrozma set seems fine. You could maybe try a Dragon Dance set instead so you don't have to rely on Weakness Policy or double dancing as much.
Heracross is fine too, but it seems like the weakest link here besides Incineroar, which I will get to. This is where I would suggest looking into some other hazard setter in place of this mon or the next one if you'd rather.
Yeah, this Incineroar set just probably won't ever work. The thing that makes Incineroar great is it's utility as a pivot and defensive check to things. I mean you really don't need 5 set up mons on one team, so if you want to switch to a defensive pivot set that would work better I feel. Or, if you really want strong Dark/Fighting coverage you can just run banded Pangoro. That or replace this slot with some form of hazard setting.
Like I said, you really don't need 5 set up mons on one team, so I'm not sure how much value Porygon provides. Maybe add Noivern to give your team some much needed speed and hazard control as well as a ground immunity. You could go with Rotom-Wash as well.
As mentioned, I don't know much about UU so take what I said with a grain of salt.
