Adamant or Jolly because Garchomp's best stat is Attack and his worst stat is Sp. Attack. Plus the fact, Gible/Gabite/Garchomp have a very physical learn-set.

Just putting it out there, Naive or Naughty is cool too because sometime Garchomp can run an effective mixed set.
