I run mine like this:

Bunnelby @ Life Orb
Ability: Huge Power
EVs: 56 HP / 158 Atk / 80 Def / 90 SpD / 126 Spe
Adamant Nature
- Return
- Earthquake
- Power-Up Punch
- U-turn

Bunnelby @ Salac Berry
Ability: Huge Power
EVs: 228 Atk / 220 Spe / 60 HP
Adamant Nature
- Substitute
- Bulk Up
- Return
- Earthquake / Stone Edge

SubBulkUp. Sub and Bulk Up until the Salac Berry activates and then proceed to sweep with STAB Return and Earthquake. Stone Edge is if you are worried about Pokemon like Gastly.

Bunnelby not only has decent stats + huge power, but he gets STAB with Return. Here's a good moveset for him:

DO YOU REALIZE THE POWER OF LIFE ORB BUNNELBY? Bunnelby can have 19 HP, meaning it loses only 1 HP per turn. It's pretty awesome.

This is a real facepalm moment
I'm an ex LC expert. I'll tell you now, the EVs do make a difference. Any good LC battler knows about them, and not adjusting correctly doesn't do you any justice.

Anyway, I have no idea why people use Life Orb. Don't, it's bad on this guy. Just plain bad.
It needs  Scarf with U-Turn or Band with Quick Attack to make it dangerous
