My sweepers usually have low physical defense, know setup moves, and don't know priority moves. Let's say that I outspeed them, I can OHKO them and they can OHKO me if sucker punch hits. Then, the two scenarios are either the opponent can use something else to OHKO me (but won't outspeed me) or the opponent can only OHKO me with sucker punch. What do I do in either scenario?

Theres no definite way to deal with a circumstance like this because, you never know how Sucker Punch mind games can turn out to be. Your best option would be to analyze the rest of his team and decide whether you need the sweeper who's currently out. U can choose to risk sacking your sweeper then with a Sucker Punch mind game, or you could switch out to a Dark resist. The opponent can predict it and go for another move, but if you've already set up on him, his best choice is to Sucker Punch because if you don't switch you could potentially sweep his whole team. More often than not the opponent would go for Sucker Punch essentially granting you a free switch. As the most common Sucker Punch user in OU is currently bisharp you do run the risk of him SD-ing up, but like I said, if you've already set up its not worth the risk for your opponent to predict a switch.

Assuming the Pokemon is a normal type with normal/fighting type moves and sucker punch,
a good way to counter would be ghost type with Will-o-Wisp.
One disadvantage about sucker punch is that I won't damage if a priority move is used(not including Moonblast, unfortunately) so Arceus with Sword Dance and Extreme speed will do the job unless Arceus faints on first(very, extremely unlikely but possible)

But those cases above are the general and more common cases I see^^
However, in yr case, if your Pokemon can outspeed the opponent's Pokemon(*if no sucker punch) then you should have no problem taking down the Pokemon, but if sucker punch is involve. I suggest a completely status move set with an extremly low level Pokemon (with sturdy and berry juice) to increase the moves used before yr Pokemon faints.

Each of my Pokemon must perform multiple roles and have their own sweeping potential. A Pineco like the one you suggested would be a waste of space on my team.
