For example:

Ditto has IV spread of
31/31/31/31/31/31.

Pikachu, for example, has a spread of
31/7/31/31/31/31 (Perfect spread for a special attacker).

If the Shiny appears with this spread with the 3rd egg in the party:
31/31/31/15/31/15

BUT the 1st egg-we'll name it "X"-hatched a Pokémon with a perfect spread, can I soft reset and hatch the 2 eggs that were received after egg X, will egg X hatch a shiny with the perfect IV spread?

I'm not 100% sure what you're asking, but the Pokémon's stats and whatnot are determined when the Day-Care man discovers an egg; saving right before hatching an egg and soft-resetting does not reroll the stats
You can test this yourself, right?

Shininess and the inheritance pattern of IVs are determined at the same time, so attempting to move the IV spread onto another egg by soft resetting or whatever will also move the shininess.
