What is a good level to evolve Eevee into Espeon in Pokemon Gold?

Well, I'm replaying Pokemon Gold and I've never used an Espeon before. So, anyway, I know that you have to evolve Eevee with happiness so I'm thinking "At what level should I evolve it?" I was thinking to evolve my Eevee once it gets to the 30s to 40s, but then I'm thinking, "What if I evolve it the wrong level I miss all the good moves?"

Eevee learns Bite at level 30, Focus Energy at level 36, and Take Down at level 42. If none of these moves are useful in your opinion, then there's no reason to evolve your Eevee sooner because there aren't any other moves that Eevee learns but Espeon does not.

Bite might be useful for enemy Psychic-types, so I would suggest evolving it at level 30
