The only version exclusive gym I can think about is Drayden being in Black and Iris being in White. Mina does get a trial in US/UM, but you're not counting that, are you?

EDIT: Wallace in Ruby/Sapphire and Juan in Emerald.

EDIT 2: Gumshoos in Sun/Ultra Sun and Alolan Raticate in Moon/Ultra Moon
