I want to make more eevees, but my vaporeon already has all of the stats/moves and such that I want it to have. I'm not sure if I can put it in the breeder without it being affected poorly. It's currently level 74.

Being at the daycare only comes with the risk of overwriting moves if there are still moves to be learned at higher levels. In GBA games, the Eevee line all get their last move at level 52, so if you deposit anything higher than that, its moves will never change no matter how long you leave it there.

Since your Vaporeon is level 74 I suppose the last move you taught or gave up on teaching it was hydro pump at level 52 so there for the breeder can't delete any of your Vaporeon moves because Vaporeon can't learn any more moves.
