Is it possible for a Pokemon to fulfill more than one role in a moveset? For example, a Pokemon that has the roles of both a bulky attacker/p-hazer?

Yes. Take for instance this Pelipper set. All credit goes to Y, as she made it:

Pelipper (M) @ Damp Rock
Ability: Drizzle
EVs: 248 HP / 232 Def / 28 SpA
Bold Nature
- Scald
- Defog
- U-turn
- Hurricane

It's a hazard remover, rain setter, and pivoter with U-turn all at once.

There are of course other examples, but this shows that a Pokemon can have the potential to fulfill multiple roles on a team.

Yes, it's possible, for example:

Hippowdon @ Leftovers
Ability: Sand Stream
EVs: 252 Atk / 252 Def / 4 SpD
Impish Nature
- Earthquake
- Stealth Rock
- Whirlwind
- Slack Off

Hippowdon works as a hazard setter, staller, and with a pretty good attack stat, it can deal good damage with its STAB Earthquake.

There are definitely many more, depending on how you use it. hope it helps :).
