I know that you can only catch one of each legendary when doing the dynamax adventure so does that mean when you have caught them all you can no longer participate in the dynamax adventures anymore?

I'm pretty sure after you catch all the legendaries you can still do dynamax adventures but you can't catch the final legendary/ultra beast at the end
I think you will encounter again.

Once you have caught a Legendary Pokemon in Dynamax Adventures, you cannot catch that Pokemon again. You can rebattle the same Legendary Pokemon as many times as you'd like, but you will be unable to catch it.

Once you have caught all Legendaries and Ultra Beasts, the only viable purpose of Dynamax Adventures is to farm Dynite Ore for competitive items or to shiny hunt non-Legendary Pokemon with 1% shiny chances.

You can still do them for Dynite ore, but you can’t catch the legendary/ ultra beast Pokémon but you can keep any other Pokémon. Like, you have all the legendary ones but you can’t catch it, you find a Gigantamax Pokémon or something, you can keep the Gigantamax Pokémon so the adventures aren’t totally useless. There are also shinies to collect/rare Pokémon so I’d suggest doing dynamax adventures whenever you can.
