or is just light on its head

I'm pretty sure that's just light on the Cloyster.

Looked though the Pokédex entries and nothing references Cloyster having a gem on it’s head.

That, plus the 3D model and updated artwork, implies that what you’re seeing is just some aggressive lightening.
