If a Pokemon was holding a Metronome and selected Future Sight, do the turns between selecting FS and it hitting count towards boosting the move via metronome?
If yes, would the moves selected in between selecting FS and it hitting break the chain? Maybe this is a stupid question, but I'm just curious to see if I can make the most out of Future Sight.

No, the Metronome item does not boost Future Sight's damage.

If the Pokémon is switched out, uses a different move, or uses the move unsuccessfully (such as targeting into Protect or into an immunity), the bonus is reset to 0%.

Future Sight fails when used if the target is already set to be hit by Future Sight or Doom Desire.

Since Future Sight fails if used before the first Future Sight attack hits, it resets the bonus to 0%.

Calcs

Without Metronome:

252+ SpA Alakazam Future Sight vs. 248 HP / 0 SpD Arceus-Water: 189-223 (42.6 - 50.3%) -- 1.2% chance to 2HKO

With Metronome:

252+ SpA Alakazam Future Sight vs. 248 HP / 0 SpD Arceus-Water: 189-223 (42.6 - 50.3%) -- not a KO

Replays

1st replay where I selected Recover, a different move in the turns between to see if it "breaks the chain."
2nd replay where I kept selecting Future Sight in between.

Hence, selecting a different move doesn't "break the chain," since Future Sight doesn't even form a "chain" like other moves would.
