The stats shown on the Home summary are much higher than a Timid Enamorus should be based on what we know of its stats, is it not? Each stat seems to be maxed past the limit for what a positive Nature and 31 IVs would provide, simultaneously.

Am I missing something?

It doesn't allow me to check the actual IVs, however. Is there an actual way to check the IVs of PLA Pokémon, or no? Because while we can't know for sure yet, these stats shouldn't transfer to Scarlet and Violet right?

Your stats are probably right, because IVs and EVs were combined into a new stat in Legends Arceus, and when transferred out of the game, new random IVs are generated, (similar to Go and LGPE,) while your Effort Level sort of transforms into EVs.
Is the random IVs part confirmed? I had heard that IVs and EVs were in PLA, just not directly viewable. If so, do legendary Pokémon and Alpha Pokémon still have 3 perfect IVs?
How would I determine what its 3 best stats actually are? Particularly since all its stats seem to be maxed past their boundaries?
IVs determine the starting Effort Values of a Pokemon, so yes they're still in the game. I don't know if the 3 perfect IVs thing is still there though, but Bulbapedia does not say anything about it being removed. Alpha's do have 3 perfect IVs though.
Home uses different trackers depending on which game is loaded. Due to stats being calculated differently in PLA, your Enamorus is almost certainly within expectations. If you haven't done so yet, you can also transfer it to a Gen IX game and see if the stats adjust themselves.
