Pikachu and Eevee started with standard 8-Bit cries. Due to Pikachus popularity and status as the mascot Pokemon, it actually had multiple different cries Throughout the different games based off of rendering the anime cries into 8-Bit. But it wasn't until Pokémon X and Y where it specifically started Mimicking the anime noises.
Eevee only started using its anime cry in Lets Go Pikachu and Eevee, likely to match Pikachu and give it some nuance as another iconic Pokemon. Gamefreak kept these cries up until Pokémon Legends: Arceus where they both went back to 8 bit renders like the rest of the Dex.
