Examples would be if a levitate mon holding the item got sent into a field being affected by gravity or got hit with smack down/thousand arrows, would ability shield stop the grounding effect from occurring, allowing them to stay immune to ground, or would the grounding effect still occur and allow them to be hit by a ground type attack.

No because the ability shield only protects Pokémon from having their ability’s changed. And smack down/thousand arrows/gravity doesn't change ability’s, it just removes the immunity to ground moves and removes the levitate ability
