Grass types resist water types weaknesses, water types kill/resist fires weaknesses and fire types can at least hit/resist some of grass’s weaknesses. What are all the other types that form 3 or more Pokemon combos together like this that are useful to keep in mind when team building.
Also sry if this is confusing

The reason why grass/fire/water works as a defensive core is because none of the types share weaknesses, and most of their weaknesses are resisted by other types in the core. The only weaknesses that aren't covered are poison, flying, and rock. These are some of the types with even less uncovered weaknesses.

Grass/water/electric: poison and bug
Grass/water/poison: flying and psychic
Water/electric/bug: rock
Water/poison/dark: electric and ground
Normal/electric/flying: ice and rock
Normal/electric/bug: fire and rock
Normal/electric/ghost: ground and dark
Normal/fighting/psychic: flying and fairy
Normal/poison/psychic: ground and dark
Electric/ghost/dark: ground and fairy
Poison/ghost/dark: ground

Note that the list is not guaranteed to be complete, and just because the types are in the list doesn't mean you can find 3 good Pokemon with those types to make a core.

Is the question specifically about whether any other sets of three types exist which have the same rock-paper-scissors relationship as F/W/G? If so then this doesn't answer it precisely either.
The question asked about cores and teambuilding, so I thought it was for competitive.
I did mean this in the sense of competitive (as you can see by the tags). I just didn’t know how to word it because I didn’t understand everything that makes grass water fire cores good. However I know for a fact that part of what makes grass water fire cores good is that they have so many resistances and a lot of the combos you listed have very few resistances.
Grass/fire/water collectively resist grass, fire, water, electric, ice, ground, bug, steel, and fairy (9 resistances).
Grass/water/poison resists grass, fire, water, electric, ice, fighting, poison, ground, bug, and fairy (10 resistances).
Water/electric/bug resists grass, fire, water, electric, ice, fighting, ground, flying, and steel (9 resistances).
Water/poison/dark resists grass, fire, water, ice, fighting, poison, psychic, bug, ghost, dark, steel, and fairy (12 resistances).
Electric/ghost/dark resists normal, electric, fighting, poison, flying, psychic, bug, ghost, dark, and steel (10 resistances).
Poison/ghost/dark resists normal, grass, fighting, poison, psychic, bug, ghost, dark, and fairy (9 resistances).
There were also a bunch of combinations with exactly 3 weaknesses (like grass/fire/water) and more than 9 resistances.

In yee olden days there was something called the “Fantasy Core”.

Fantasy Core
- Fairy
- Steel
- Dragon
The only issue though is it’s not a perfect trinity as steel resists both fairy and dragon.

Here are some more traditional trinities.

  • Psychic
  • Fighting
  • Dark

Fairly self explanatory; Psychic->Fighting->Dark repeat. There are more such as:

  • Grass
  • Rock
  • Flying

This is easy again.

  • Electric
  • Ground
  • Water

There’s probably even more if anyone can find any I will happily add them.

Grass/fire/water works as a defensive core because none of the types share weaknesses, and most of their weaknesses are resisted by the other types. This also true for dragon/steel/fairy, but none of the other cores you listed can cover each other's weaknesses like that.
