Which is the best/most fun for me to start on?

What are just some minor and major differences between the games, do they affect the gameplay?

"Which is the best to start on?" is a very subjective question, but I can tell you that Heartgold, Soulsilver, Black, and White are the ones with the best reviews on websites like Metacritic, Opencritic, and Backloggd.
It would be easier to answer this if you gave some examples of things you want compared between the games.
1. What does "like" mean here?
2. They're two games in the same series on the same console... how different can they be? They have an entirely different setting and plot and a different set of Pokemon available, as well as differences between minor gameplay mechanics (for example, Emerald has two different bikes that have different purposes) that aren't really comparable. In my opinion, they're the best games in the series (with Firered being a little better), but that's not really something you can quantify.

Why don't you just choose one and play it? The gameplay loop of every Pokemon game is more or less the same, it's not like by choosing one over the other is going to leave a bad taste in your mouth that the other one wouldn't have.
