If I were to use stat raising moves with a Pokemon with the Ability Simple, do the double boosts stay when Baton Pass is used, or does it go back to normal?

In all generations where Simple exists except for Generation IV, the Ability doubles the stat boosts received. This means a Bibarel's Swords Dance will give +4 Attack instead of +2; thus, the recipient of Baton Pass will receive all 4 stages.

In Generation IV only, Simple boosts are not treated as direct stat boosts; instead, they double the effectiveness of boosts. This means that, when Baton Passed, the recipient will only receive the tangible stat boost (e.g. +2 from Bibarel's Swords Dance, not +4).

Erm, ackchually, Bibarel can't learn swords dance in gen 4.
(the mechanics in this answer are correct, please ignore my comment)

It would go back to normal.

"Whenever this Pokémon has a stat boost or drop, it acts as if it is twice that many levels. One boost would act as two boosts, two boosts would act as four boosts, etc. The user can still only have a max of six effective boosts; no effect will be noticed from fourth or higher boosts. The same applies to stat drops. If this Pokémon is Baton Passed to, the boosts received are affected by this ability. If it uses Baton Pass, the boosts return to normal."
