Vanilluxe is typically going to be your starting Pokemon. Use Aurora Veil first, and then either clear out or do some damage. Blizzard is 100% in hail and is very strong. Freeze-Dry is for Water-types, but other than that you're probably going to use Blizzard as your main attacking move. Taunt is for either stallers or set-up sweepers. After Vanilluxe has done its job, switch it out, because it's likely not going to tank, especially against Physical moves.

Tsareena is your hazard-removal Pokemon. I wanted something a bit different than your average Excadrill, since almost anyone's going to know what you're doing with that. It has worked well for me so far and almost no one's expecting you to run a Rapid Spin Tsareena in Gen 8 OU. Power Whip is good STAB and hits really hard. High Jump Kick also hits really hard and has a much better accuracy. U-turn is a good physical momentum move.

Garbodor turns into a veritable physical tank with Aurora Veil up. Spikes and Toxic Spikes are both hazards, but if you see a non-fainted Poison-type on your opponent's team, use Spikes over Toxic Spikes. If not, both are for you to use at your disposal. Pain Split adds recovery if your opponent's HP is higher than yours, and Gunk Shot makes sure you don't get walled by Taunters that aren't Steels or Poisons.

Ability: Sturdy
EVs: 252 HP / 4 Atk / 252 SpD
Careful Nature
-Stealth Rock

Your second staller + hazard-spreader. Stealth Rock takes care of Flying-types that Spikes/Toxic Spikes couldn't have. Earthquake is STAB and general coverage, and Heavy Slam is also STAB that compliments Steelix's immense weight. Toxic adds passive damage, while Leftovers adds passive recovery.
Talonflame @ Heavy-Duty Boots
Ability: Gale Wings
EVs: 252 Atk / 4 SpD / 252 Spe

This is the set-up sweeper on the team. Swords Dance boosts Attack by a lot if you can find a predicted switch or are very, very confident Talonflame can take the next hit (which isn't very likely). If you don't satisfy either of these things, you can resort to this Pokemon's high-powered STABs in Brave Bird and Flare Blitz. Brave Bird is priority when this thing's HP is full, and Flare Blitz is the second option. Roost helps you recover HP and keep the Gale Wings up.
Rotom-Mow @ Choice Scarf/Choice Specs
Ability: Levitate
EVs: 4 HP / 252 SpA / 252 Spe
Timid Nature
-Volt Switch
-Leaf Storm
-Trick
-Thunderbolt
This is your special sweeper. Volt Switch maintains momentum. Leaf Storm is the powerful Grass-type STAB, although it does lower your special attack. Trick surprises the opponent and limits them to one move -- helpful against pesky walls. Thunderbolt is the other, reliable Electric-type STAB. Your choice of item depends on: a) whether you want more power or speed and b) what you want to limit your opponent to. Choice Scarf could potentially be dangerous and allow your opponent to outspeed you, and Choice Specs could be deadly on a special attacker. Other item options are White Herb, but that makes Trick redundant.
I hope you have fun using this team! I've had a lot of fun with it and managed to rack up multiple wins. Most of these Pokemon are very surprising in Gen 8 OU.
