I wouldn't actually say that question is opinionated at all. You could give some pretty good advice about that just based upon personal experience.
Most Pokemon are able to force/encourage a switch of some kind. Even defensive Pokemon can apply pressure for switches, because they can use utility moves (e.g. status, hazards, healing) if they're allowed to stay in for too long. The Pokemon that are able to force the *most* switches are probably fast cleaners with wide coverage (e.g. Zeraora and Dragapult, as an example for OU).

Pretty much. There will be a broad VGC Season (Like this year was VGC20) every year, but some years there will be multiple formats for VGC, like in 2019 there was Sun Series, Moon Series, and Ultra Series, and this year there's been 6 different series, all with different rules. There are also "Ranked Battle Seasons" for the in-game Battle Stadium, but those are just when the ladder resets every month. It's expected that VGC 2021 will start with the release of the Crown Tundra, so the "New Year" is more like when the new game comes out in November. Sorry for the long winded explanation :P

There's no necessity implied in the teammate lists on those pages, but they do give an idea of which Pokemon are *likely* to appear on the same team, based on what people have been using. To use the Hitmonlee example, the stats are saying that teams with Hitmonlee include Indeedee-F 49% more often than teams that don't have Hitmonlee.
Usually, you'll find synergies like Pelipper + Kingdra in these lists. In Hitmonlee's case, Indeedee-F tops the list because psychic terrain enables its Unburden set.
