What are the benefits of delaying a Pokemon to evolve?

A Pokemon that doesn't evolve can learn a move earlier. Also, there are certain Pokemon that cannot learn a move once it's evolved, e.g. Eevee can learn Baton Pass at level 33 (in B2W2), but Espeon cannot learn Baton pass at any level.

Best answer
Some can learn moves at earlier levels then its evolution. Also sometimes a stat will go down.
