I would do just a simple 252 SAtk / 252 Spd / 4 SDef. Standard sweeping EVs. It gives you power and speed, and Espeon is meant to be a Calm Mind sweeper so sweeper EVs just make sense. The 4 SDef EVs are just basically thrown in to help boost SDef kinda. xD

However, there is another option. 252 HP in the place of Special Attack is good for having a little extra bulk and gives you an easier time getting up more Calm Minds. Though the power drop can be noticeable sometimes.

Why 252 in Speed? I'm new to EVs, and trying to figure them out, but I don't see as much benefit in full speed as in full HP, since Espeon's HP and Defense aren't very good...
Because Espeon sweeper sets need to be fast. It allows them to move before many opponents and knock them out before they can do the same.
Full HP should only be used in sets that focus on stopping thing like Ferrothorn from setting up Stealth Rocks (for example) as they focus on a bulkier version of Espeon.
Sweeper Espeon sets should not use HP over Speed. Though raising a weak stat may seem like a good idea, it is generally better to focus on raising what Espeon needs to work properly.

If you're gonna use a CM Espeon I suggest dropping Grass Knot. Maybe go for Hidden Power [Fire] or even [Fighting] which gives almost perfect synergy.

I suggest going with the fast sweeper spread (to compliment a sweeper spread) of 252 SpA / 4 SpD / 252 Spe
